Ingredients

  • 1.00 c all-purpose flour
  • 1.00 tbsp baking powder
  • 0.25 c butter (Melted)
  • 1.00 c cornmeal
  • 1.00 egg
  • 1.00 c milk
  • 0.50 tsp salt
  • 1.00 tbsp sugar
  • 1.00 tbsp vegetable oil

Directions

  1. Preheat oven to 400°F (200°C). Place an oven-safe skillet in the oven while it heats.
  2. In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Carefully remove the hot skillet, add the vegetable oil, and swirl to coat the pan.
  6. Pour the batter into the hot skillet.
  7. Bake for 18–20 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  8. Let cool slightly before slicing and serving.
